“Vegetables as a main ingredient for a muffin? No way!” Was my first reaction when I heard about Garden Lites’ Veggie Muffins that offer to be veggie rich (main ingredients), convenient, support a clean eating lifestyle, gluten, dairy and nut free! Come on, really?! I was excited to see if Garden Lites held up their end of the bargain so I headed off on a mini vacay (aka grocery store without my toddler) to pick up my Garden Lites’ Chocolate Muffins along with a few other of their products, as I couldn’t resist trying several of the muffin options.
I’ll be quite honest, I just couldn’t imagine how they would be appetizing, let alone fool my toddler into eating them, however I do have to brag a little that my 19 month old actually likes most veggies but I was excited, most of all, for the convenience these would hopefully bring since we are constantly on-the-go.
I was surprised to see that Garden Lites has several flavor muffin options packed with a variety of veggies! Along with the Chocolate Muffins, made with fresh zucchini and carrots I picked up the Ninja Power Muffins, Carrot Berry Muffins, Banana and Chocolate Chip muffins and the spinach bake.
These healthy, veggie packed muffins are delicious and extremely convenient. Running late in the morning? Pop it in the microwave for a quick 35 seconds and out the door you go. Have a long day of traveling and need a back-up snack for the kids? Pull them straight out of the freezer, stick them in your bag and they will thaw, ready to eat in a few short hours!
I found my Garden Lites Muffins at Publix! You can find yours in the freezer section of your nearest Publix, Stop & Shop, Giant, Shop-Rite, HEB, Kroger or Costco.
